金沙虾仁

虾仁 | 200克 |
鸡蛋黃 | 1个 |
香葱 | 2根 |
小米辣 | 1个 |
生姜 | 1片 |
白胡椒粉 | 1克 |
生粉 | 22克 |
咸蛋 | 1个 |
蒜瓣 | 3瓣 |
色拉油 | 5勺 |
金沙虾仁的做法
1、冰冻虾仁化开,去虾线,反复冲洗干净。
2、将蛋黄,1根葱切的末,生姜未,小米辣切的小丁,生粉2克放入虾仁,用力搅至出浆。
3、鸭蛋一只,剥出蛋黄压碎,再取半只蛋白切成碎丁。
4、将1根香葱3瓣蒜切碎。
5、1勺油下锅,将压碎鸭蛋黄炒成金沙。
6、鸭蛋黄炒至无颗粒。
7、加蛋白碎和葱末蒜末炒香。
8、炒好成盘做个围边。
7、将虾仁裹上生粉。
8、待油微冒小泡将下虾仁放入煎,煎至虾肉变白翻面,约2分钟,全程小火。
9、煎好装盘,整个菜不用放盐,吃虾仁时沾上围边的咸蛋,完全借用咸蛋的咸味,如果重口可以酌量加上未用的半只蛋白。尝一口,咸蛋黄炒出的金沙就像是给虾仁注入了灵魂,让Q弹的虾仁美味升级。
